MARCH/APRIL 2016 115

½ cup confectioners sugar 3 cups mixed berries

until the syrup reaches 250°F on a candy thermometer. STEP 3 Separate the eggs, reserving the yolks for another recipe. In a clean, dry bowl, beat the egg whites until stiff, about 2 min. Add the confectioners sugar and beat until mixture forms stiff peaks. STEP 4 Preheat the broiler to its highest setting. Carefully pour the hot syrup into the egg whites in a thin stream, mixing as you do so. Continue mixing until the meringue has cooled, 6-7 min. Chill. Do ahead: You can make the meringue a day ahead. Store, covered, in the refrigerator. STEP 5 Quickly spread ¾ of the meringue over the hardened ice cream. Put the rest of the meringue into a piping bag fitted with a decorative tip and pipe rosettes around the cake. Place under the broiler until the meringue is lightly browned, 1-2 min. Watch closely to prevent burning. Garnish with mixed berries and serve immediately.
