Food hygiene and food safety are the most important factors for food and drink manufacturers. The Codex Alimentarius Commission (CAC) defines food safety as ‘the assurance that food will not cause harm to the consumer, when it is prepared and eaten according to its intended use’.


Food manufacturers can ensure their products are indeed safe for consumption if there is:


1. An absence of spoilage – no microbiological or chemical degradation to the food during production and before expiration dates.


2. An absence of foreign bodies – pathogens, bugs, hair etc.


With these assurances in mind, it’s clear to see why cleanliness is pivotal in food safety.


Reducing reliance on harsh chemicals


Chlorinated products, for example, are still one of the most prolific cleaning substances in food manufacture, especially in ‘wet’ cleaning areas where moisture isn’t a concern – bakeries, drink lines, and even vegetable producers use these products.


It’s not just the end product affected by harsh chemicals – chlorinated products cause stainless steel machinery to corrode and rust over prolonged periods of time. According to NACE International, in the USA nearly $2.1bn is spent annually on corrosion-related costs by the industry. Corrosion in food manufacturing environments is a significant issue because it can lead to equipment failures and costly downtime.


Synthetic conveyors will naturally wear from prolonged usage, whether that’s through mechanical abrasion, cuts, tears, and even micro-cracks that can appear


over time. Increasing the frequency of cleaning or using more aggressive detergents can make matters worse, accelerating this wear. For surfaces in direct food contact, this means increasing the risk of contamination with pathogens harbouring in these microscopic chasms.


Whilst chlorinated products can kill 99.9% of bacteria, they can also be poisonous. When they’re used to clean food preparation surfaces, there’s a risk of chemical contamination, which can produce oesophageal gastric burns due to its corrosive nature. When chlorinated products seep into water sources, it mixes with minerals and elements to create a host of dangerous toxins that can take many years to dissolve. According to the US Council of Environmental Quality, ‘cancer risk among people drinking chlorinated water is 93% higher than among those whose water does not contain chlorine’.


Although rigorous cleaning practices may seem like the solution, they can feed into this vicious circle. Innovative solutions are required to improve the quality of cleaning across the food and drinks industry – roll out:


Dry steam powered belt sanitation units

Conveyor belt maintenance frequently gets short-changed due to time constraints, budget restrictions and a shortage of labour and training.
