THE WORTLEY ARMS
Rhubarb is a native of Siberia and thrives in the cold Yorkshire winters, particularly the Rhubarb Triangle in West Yorkshire. This region is famous for producing early season forced rhubarb from darkened sheds, where you can literally hear the rhubarb pop up.
Ingredients: 700g tender pink rhubarb, topped
and tailed
75g caster sugar 1 egg yolk
1 heaped tbsp semolina
For the shortcrust pastry: 175g plain flour 40g lard 40g butter
2 tsp icing sugar
For the glaze: 1 egg white
2 tsp demerara sugar
Yorkshire Rhubarb Pie Method:
Heat the oven to 200°C. Make up the pastry by sifting the flour into a large mixing bowl, then rubbing in the fats with your fingertips until it looks like fine breadcrumbs.
Add the icing sugar and drizzle in enough cold water to bring it together to a smooth dough and knead lightly. Rest the pastry in the fridge for 30 minutes.
Roll the pastry out to a circle of about 36cm diameter and carefully transfer it to the centre of the lightly greased baking sheet. Paint the base with egg yolk then sprinkle the semolina lightly on top. Pile the rhubarb in the centre of the pastry, together with the caster sugar. Turn in the edges of the pastry so that they cover the first 6cm of the rhubarb – leaving the centre simply full of rhubarb.
Brush the pastry all round with the egg white, then sprinkle over the demerara sugar.
Bake on the top shelf of the oven for 30 minutes or until the crust is golden brown.
Remove from the oven and serve warm with custard, cream or ice cream.
