Are we re-discovering our appetite for seafood? Most definitely - people love fish especially when you can see the sea. I personally don’t think there is a better food at the moment.


What impact has each opening had on the local community? e.g. jobs, fundraising etc A mantra I have is that “restaurants belong to the commu- nity”. I think everyone likes to feel that the place they go to regularly is theirs, that they enjoy the welcome, and are able to relax and celebrate all their family milestones and the special things in life. So, it’s fitting that our restaurant, as part of the com-


munity, does something for the community. I saw some fundraising at a restaurant in London where money was being raised for Action against Hunger by adding a £1 to the bill. I thought it was a good idea and we tried it in our restaurants, distributing the money to local charities that make a difference directly in the community but who often found fund-raising hard. We also host fundraising evenings in the restaurants where we donate the profit to the charity who’s night it was. It’s a good way for them to raise money and have some fun! So far, we have donated over £150,000 to local causes and helped young people sail and helped one sailor, Henry Bomby, to reach the pinnacle of sailing round the world in one of the toughest races, the Volvo Ocean race.
