Roasted corn and beetroot bowl with raspberry vinaigrette


Serves 2


Ingredients: 50g raspberries 1 raw beetroot 2 corn on the cobs 100g mixed rocket salad 1tbsp avocado oil ½tsp smoked paprika Juice of 1 lemon 1tsp freshly grated ginger 1tbsp apple cider vinegar 1tbsp olive oil 50g toasted pumpkin seeds Salt and pepper


Method: 1. Heat a griddle pan to a medium heat.


2. Mix avocado oil, smoked paprika and a pinch of salt and freshly ground pepper in a bowl. Brush the spiced oil evenly over both corn on the cobs. Wrap them in foil and griddle them, rotating every few minutes, for 20 minutes, or until cooked. Unwrap the corn, let it cool, then use a knife to cut the corn away from the cob.


3. Put the raspberries in a pan with 2tbsp water, lemon juice, grated ginger, apple cider vinegar and the olive oil, and simmer over a low heat. Mash down the berries to form a purée and set aside to cool.


4. Grate the beetroot into a bowl with the rocket and mix with half the raspberry vinaigrette dressing. Sprinkle over the toasted corn, pumpkin seeds and top with the remaining dressing.


Honey-roasted celeriac, quinoa and raspberries


Serves 18


Ingredients: 100g raspberries 1 large celeriac 150g quinoa 3tbsp honey 5 sprigs thyme 2tsp grainy mustard 2tbsp avocado oil 2tbsp olive oil Salt and pepper


Method: 1. Preheat the oven to 200C/180C fan.


2. Boil the kettle, peel and cut the celeriac into inch-sized cubes. Pour the boiling water in a pot, add a pinch of salt and bring to a high simmer. Place celeriac in the boiling water and boil for 10 minutes, drain and mix with the avocado oil, honey, thyme, mustard, fresh pepper and a pinch of salt. Place on a roasting tray and roast for 30 - 40 minutes until golden and cooked through.


3. While this is cooking place the quinoa in a pot with 500ml water and a pinch of salt. Bring to the boil then simmer for 15 minutes until all the water has evaporated and the quinoa is cooked through. Mix the quinoa with the olive oil and raspberries. Once the celeriac is cooked, mix it with the raspberry quinoa mix and serve.
