Show Review Kennedy's Bakery Production

sign, Bühler believes that this is the ideal equipment for the industrial production of a variety of cereal bars, or the manu- facturing of smaller seasonal volumes. The system is ideal for producing a wide range of cereal bars with a through- put of up to 130 kg/hr, depending on product size and recipe with or without a cooling tunnel, and depending on the product. In combination with other sys- tems, the SnackFix can produce enrobed products and extruded products with or without filling. Thanks to the modular de- sign, the manufacturing of a huge variety of products is possible. Bühler also presented complete pro- cess solutions for cocoa and chocolate products, nuts, confectionery, pastries, cookies, muesli and energy bars – from raw material to end product, and every- thing from a single source.

Naturalness and indulgence for baked goods

Doehler, a supplier of natural food and beverage ingredients based 200km south of ProSweets in the German city of Darmstadt, presented a number of products which combine indulgence, functionality and health under the motto ‘Multi-Sensory & Nutritional Excellence’. The company had many of these multi-sensory experiences at its stand at ProSweets, including fruit gums with proteins, spicy ciabatta with carrot gran- ulate, and dark chocolate pralines with

a liquid Cold Brew Coffee core. It also presented its extensive product portfolio of natural ingredients, ranging from natural flavours, natural colours, health and nutrition ingredients, cereal ingredi- ents, dry ingredients, fruit and vegetable ingredients to ingredient systems. Doehler is focusing on natural ingredi- ents and ingredient systems in line with the motto "Turning the best out of nature into Multi-Sensory & Nutritional Excel- lence". Whether fruit fillings in biscuits or crunchy indulgence in chocolate prod- ucts, Doehler believes it has an option for every taste. In order to ensure access to natural raw materials, the company has its own processing plants for fruits, vegetables and many other raw materi- als in regions around the world. Thus, it has a wide portfolio of natural ingredi- ents in premium quality which not only provide the desired taste and colour, but also a balanced nutritional value. Alongside its fruity flavours, Doehler

also presented a new range of ‘brown flavours’. These flavours are intended for pure indulgence, which is why they are among the top flavour variations in the baking and confectionery segment. They range from taste nuances such as eggnog, salted caramel and brownie, to taste-perfected classics such as chocolate, cocoa, nougat, macadamia and caramel, with milky, vanilla, nutty, roasted, honey or smokey notes. For the majority of consumers, the

colour of the food, along with the taste, is an important factor when making their purchase. Doehler offers a broad portfolio of brilliant colours from natural raw ma- terials and the reassurance of knowing that they will remain permanently stable in different product applications. The wide range of natural colour solutions contains large differentiation potential and enables scope for creativity for the design of product concepts in the baked goods and confectionery industry. At the show itself, Doehler presented a naturally coloured pink popcorn with a fruity-fresh taste, which it gets from a natural berry flavour. The glitter from a pearlescent colour gives the popcorn a bright sparkle.

Haas has it covered

In addition to its joint stand with Buhler (see our cover story for more), Haas was at ProSweets to discuss the opportuni- ties provided by its four brands. This included equipment from FHW Franz Haas Waffelmaschinen, a world market leader in the wafer industry pro- ducing wafer equipment for flat wafer, hollow wafers, snacks and wafer sticks. Meanwhile, CFT Haas Convenience Food Equipment implements wafer know-how innovatively. Based on this, the company manufactures plants for rolled and moulded ice cream cones, moulded cones and cups, special wafer products, Belgian waffles and wafer rolls. Haas-Meincke A/S is focused on equipment for biscuit products and designs and manufactures lines for crackers, cocktail crackers, lye and semi-sweet products, all kinds of soft dough biscuits like moulded or wire-cut products and cake products. Addition- ally, the company offers machines for biscuit sandwiching and snacks. Finally, Haas-Mondomix B.V. special- ises in mixing, aeration and depositing equipment for baking, confectionery, dairy and non-food products. ProSweets returns to Cologne in 2019, and will take place from January 27-30. For more information, visit www. prosweets.com
