BBQ Grilled Aubergine Burger A yummy vegetarian BBQ burger, perfect served with a side salad and a tzatziki dressing Make your burger Ingredients for 4 servings


Burgers: 2 aubergines Lettuce leaves Sliced tomato 1 red onion 4 burger buns Cooking Oil


extra special by adding a curry marinade


75ml vegetable oil 1-2 tsp curry powder Juice of ½ a lime 2 cloves of garlic Salt & pepper


Method: • Wash all the vegetables. Cut the aubergines into slices 1cm thick. Peel and slice the onion. •

Brush the sliced aubergine with curry marinade and season both sides. Prepare to the BBQ or grill


• Cook the sliced aubergine for approx. 4 minutes on each side. • •


60 Split the buns and drizzle some oil on the inside and toast gently.


Serve the aubergine inside the warm toasted buns with lettuce, onion rings and tomato, with a dressing of your choice.

To make the curry marinade, mix the oil, lime juice and curry powder together into a paste, peel and crush the garlic and add to the mixture.
