Take the heat out of the kitchen


As temperatures begin to soar, the last thing you want to do on hot, humid days is turn on the oven to make dinner. Your air condi oner works extra hard during summer months to keep your home cool, so why not give it a break with easy, effi cient, no-bake recipes. The recipes below are meant to help you make a delicious meal for your family, without breaking a sweat!


Spiced Chickpea Pita Sandwiches 2 fresh pitas, cut in half


Chickpea fi lling: 2 cans chickpeas, drained and rinsed 2 tablespoons olive oil Juice of one large lemon 2 teaspoons lemon zest 2 teaspoons cumin 2 teaspoons dill 2 teaspoons coriander seeds 1/2 teaspoon salt 1/2 teaspoon pepper 1/2 teaspoon red chili fl akes 3 cloves garlic 4 ounces cherry tomatoes, quartered 1/2 cup chopped cucumber 1 small red onion, fi nely diced 1 tablespoon chopped fresh cilantro


In a bowl, combine chickpeas, olive oil, lemon juice, zest and spices; s r to combine. Cover and allow the chickpeas to sit for one hour to let the fl avors combine. Toss in the tomatoes, cucumber, onion, and cilantro.


Whipped feta: 6 ounces feta cheese 2 ounces cream cheese 1/4 cup olive oil


Add feta and cream cheese to a blender or small food processor, slowly drizzle the olive oil into the blender top un l the mixture is creamy and smooth.


To assemble sandwich: Wrap each pita in a damp paper towel and microwave for 30 seconds. Open the pocket of the bread. Spread the whipped feta into the pita, add the chickpea fi ling, and you have a refreshing sandwich.

No-Bake Lemon Truffl es 2 1/2 cups Lemon Cake mix 8 tablespoons melted bu er 2 tablespoons lemon juice Zest of one large lemon Granulated or confec oner’s sugar


In a large bowl, combine the cake mix , melted bu er, lemon juice and lemon zest. Use your hands to combine un l the fl our is moist and fl aky. Roll dough into one-inch balls, roll in sugar to coat, and serve.
