SEAFOOD EGG FOO YONG Ingredients:
Brown Sauce: 2 cups boiling water 3 beef bouillon cubes 3 Tbs. cornstarch
3 Tbs. butter or margarine 1 tsp. soy sauce, to taste
Crab or Shrimp Patties:
6 large shrimp, cooked & diced or 4oz Crab 2 cups fresh bean sprouts, chopped 2 scallions, chopped fi ne 3 eggs

DIRECTIONS: For Sauce: Pour boiling water over bouil- lon cubes, stir until dissolved. Cool. In saucepan melt the butter until lightly browned and stir in cornstarch to make a paste. Slowly add Bouillon mixture, stirring until thick- ened. Keep warm.
Combine patty ingredients and shape mixture into four fl at rounds. Fry in oil heated to 300 degrees until golden brown. Serve with sauce.
