Sag (spinach) and tofu/paneer Ingredients:
Sag (spinach) and tofu/ paneer 4 tbsp oil
175g diced tofu or paneer 1 large onion, finely chopped 1 tspn garlic paste 1 tspn ginger paste
350g spinach, chopped frozen Method:
½ tspn turmeric powder ½ tspn chilli powder 1 tspn coriander powder salt as required 1 large tomato, diced 1 tspn garam masala water if required

Heat the oil and shallow fry the tofu/ paneer until golden, then set aside. Fry the onions until golden, add the frozen spinach, turmeric, chilli, coriander, salt, garlic, ginger and garam masala (add water if you like it with more sauce). Mix all gently together and cook on a medium heat for 5 minutes. Add the fried tofu/ paneer and tomatoes and cook for a further 5 minutes.
Check for flavours and add extra salt, chilli etc if needed. Enjoy.
