4 cups vegetable broth 5 cups diced peeled butternut squash 11⁄2 cups chopped yellow onion 1 large ripe pear, cored, peeled and diced
1⁄2 teaspoon salt, or to taste Pinch cayenne pepper 1 tablespoon freshly squeezed lemon juice
1 teaspoon Earth Balance or ghee
1 teaspoon chopped fresh thyme leaves
SONOMA COUNTY, CA. ~ Use the same recipe for: Cab- erI love making this soup in the fall when the weather starts to cool and I’m looking for things to do with the butternut squash that I harvested over the sum- mer. It’s also gluten free and has less than 200 calories per serv- ing. REQUIREMENTS Blender or Hand Immersion Blender

Directions:
Place the broth, butternut squash, and onions in a large soup pot and bring to a boil on high heat. Reduce heat and simmer, partially covered, un- til the squash is tender, 15 to 20 minutes. Add the pear, salt, and cayenne and cook another 10 minutes.
Working in batches, place the soup in a blender and process until smooth. Or, blend in the
dinner, a role not until then offered to a woman in its seventy-two year history.

Adjust salt, if needed, and stir in the lem- on juice and Earth Balance or ghee.
Serve in 4 small bowls or mugs and top with fresh thyme
and
freshly ground black pepper.
