Carrot Muffi ns


Preheat the oven to 190°c or gas mark 5


150g grated carrots 2 medium sized eggs 100g soft brown sugar 5 tbsp sunfl ower oil 100g self raising fl our 1/2 tsp ground cinnamon 100g raisins


• Lay out the muffi n cases into a muffi n tray. • Mix up the eggs and sugar and then beat in the oil • Add the fl our, cinnamon, sugar and grated carrots and mix up.


• Once it’s all blended together, spoon the mixture into the muffi n cases and bake for about 20 minutes


• You’ll know they’re done when they’re fi rm on the top and golden in colour


• Let them cool down on a tray and enjoy with a cup of tea.
