Trout with Bananas by Wendy Gudgeon
Ingredients (serves 4)
2 bananas 4 trout, gutted and cleaned 1 beaten egg 2 tspns fresh, finely chopped thyme, dill and parsley salt and pepper 2 tbspns fresh breadcrumbs 25g butter
2 tbspns seasoned flour 25g olive oil juice of 1 orange and 1 lemon 1 tbspn finely chopped parsley
Method: • Mix the breadcrumbs, herbs and seasoning with enough beaten egg to bind. •
• Melt the butter and oil in a heavy frying pan and cook the fish until golden brown • •
Fill each fish with this mixture and roll in the seasoned flour. (about 5 mins each side)
Transfer to a serving dish and keep warm.
• Cut the bananas in half lengthwise and fry them in the rest of the butter. Drain. • •
Put the orange and lemon juice in the pan with the parsley and heat. Pour over the trout and bananas and serve immediately.
