Baader does it better
BAADER offers complete processing solutions to the industry – from gutting, heading, fi lleting, skinning, trimming and fi nal inspection to sizing and grading. In Brussels, Baader will show its new fi lleting machine, the Baader 582, and state-of-the-art skinning machine, Baader 59, which combined offer a more effi cient work fl ow. The fi lleting machine is designed in a completely new manner with re- spect to hygiene, food safety, maintenance, performance, fi llet quality and production control. Due to computer controlled tools and self-adapting fi sh guides, less miss-cuts and fewer stops occur. A wide working range can be processed without adjustments and the customer can switch between different species by easy settings on a touch panel.
Baader claims that its machine produces the best fi llet in the world, especially in the high value loin area. The membrane in this area stays intact and due to the new cutting process, without stickle and scraper knives, there is no stress on the fi llet. This is extremely important with soft fi sh. The black belly skin is perfectly removed. Its skinning machine, specially designed for cod, saithe and haddock, handles fi llets tail fi rst, producing a shallow skinned high yielding fi llet. Due to a special technique, it is possible to ensure a perfect skinning result even at the tail tip. Even soft product is skinned very gently. Also on show will be the Baader 588 fi lleting machine for fresh and
defrosted white fi sh. Easy to operate, this machine is cam controlled - no electronics or pneumatics are needed. A small touch panel is available for intuitive operation. Baader offers a humane and effi cient method for stunning and bleeding salmon/trout and many other fi sh species, utilising percussive stunning and bleeding technology. This welfare friendly solution is a key process in the provision of opti-
mum fi sh quality and next stage fi sh processing. The unique Baader SI automated harvest system takes advantage of
the fi sh’s natural behaviour where they swim into the stun/bleed ma- chines, with the minimum of stress.
Baader supplies a complete range of machines and supporting modules specifi cally suited to the harvesting requirements of the client. This includes everything from single stun/bleed combined machines to ad- vanced multi-channel systems incorporating automated fi sh delivery.
