RAMEN RAGE NOODLES AND BEYOND!
by jay jones Many in the United States know “ramen” as the easy-to-
make, packaged meal, created simply by adding hot water to instant noodles, that is sold in a styrofoam cup. When I think of ramen, it’s based on recipes from Japan
that must be many centuries old. Though the true origins of ramen remain unclear, some argue it is of Chinese origin and others maintain that it was invented in Japan during the early 20th century. Up until the 1950s, when served in Japan, the meal was
called shina soba, literally meaning “Chinese soba” and later being renamed as ramen. During the 1980s, ramen became a Japanese icon. Today, some 35 years later, it’s quickly become “all the rage” in restaurants around the globe. It’s for a good reason— there is nothing like a homemade, fresh and well- prepared bowl of ramen. And believe me, it’s worlds apart from the instant noodles in a cup! The Rage Monthly has recently been “noodling around,” sampling ramen and have come up with a few great recom- mendations.

extensive menu of tasty, non-sushi items and the Kimchi Tonkotsu Ramen, is one that will keep you comin’ back for more! It’s made with a wonderful, creamy pork broth with kimchi, green onion, menma (bamboo shoot), kikurage mushroom and char siu (Chinese barbecued pork). The kim- chi is a wonderfully nice touch to the bowl, which adds a light, spicy/sour flavor.
