MAKING BUTTER
BISCUITS To make quick and easy biscuits using the “rubbed in” method, why not try this simple recipe for deliciously light and crumbly butter treats.
150g unsalted butter, softened and diced 225g plain flour, sifted, plus extra for dusting
100g caster sugar 1 egg yolk 1 tsp vanilla extract
Special Equipment: 7cm round pastry cutter
1 Preheat the oven to 180°C/Gas 4. Using your fingertips, rub together the butter, flour, and sugar, until they resemble fine breadcrumbs. Using a wooden spoon, mix in the egg yolk and vanilla extract. You may not need all the egg yolk, just enough to form a soft, but not sticky, dough.
Do not add too much flour to the surface, as this will make the biscuits dry
Dough should be soft and still a little crumbly
TOP TIP
To save time, blitz the flour and butter together in a food processor to
form the breadcrumbs.
2 Form the dough into a ball, then turn it out onto a lightly floured surface. Knead the dough for a few seconds with the heel of your hand. Push it forward slightly, then fold its far edge into the centre. Turn the dough and repeat the process until the dough is smooth.
