dot grape is a part of classic Bordeaux blending. Meeker’s ’04 Petite Verdot comes with hints of spice box accompa- nied by dense fruit, dark color, powerful flavors and heavy tannins. Petite verdot acre- age is increasing in vineyards throughout the new world. The last taste is the ’05 Four


Kings, a special blend with four of the “big six”. Loaded with primarily cabernet sau- vignon, plus merlot, cabernet franc and petite verdot. Hence the name. A huge red wine with deep ruby color, full of dark berry flavor and with a dry lush finish. The grand finale to the “big reds and blues”. I am pairing a rack of


lamb dish with the unique Handprint Merlot. I know this a pricey cut of meat, but it's pretty easy to prepare and will compliment this wonderful wine.

SPICY RACK OF LAMB WITH MUSHROOM SAUCE


1/2 rack of lamb, fat removed from meat and bones 1/4 cup dijon mustard 1/2 each teaspoon fresh rosemary and thyme- salt and freshly ground pepper 1-14.5 oz. can beef stock 1/2 lb. cremini or small por- tobello mushrooms, sliced 4 tablespoons sweet butter


Mix mustard, herbs, salt and pep- per. Coat top of rack with this mixture. Reduce beef stock in saucepan by half. Sautee sliced mushrooms in 2 tablespoon but- ter until tender. Add mushrooms to beef stock and keep warm. Broil lamb rack in oven for 10 to 15 minutes, depending on desired doneness. Cover loosely with foil and let rest for 10 minutes. Finish sauce by adding remaining but- ter. Slice rack into chops, two per serving and garnish with sauce. Serves 3 to 4.
