3. For the dressing, whisk together the olive oil, vinegar, honey, ginger, and salt and pepper in a bowl, according to taste. Add the dressing to the slaw, using just enough to coat the vegetables nicely. Toss well. Let rest at room temperature for about an hour before serving, or cover and refrigerate. The slaw will remain crunchy for at least eight hours.

Loaded Fruit Salad with


Greek Yogurt and Honey Dressing The founder and CEO of Garden of Life and author of The Maker’s Diet, Jordan Rubin will in OKC on May 3rd. His wife, Nikki Rubin created this wonderful, raw and very nu- tritious fruit salad... making eating health fun and simple.


Serves 2 Salad


2 bananas 1 cup of white or red seedless grapes 2 cups fresh strawberries, sliced 1 cup fresh blueberries 2 sliced kiwis


Dressing


1 cup Greek yogurt (whole fat) 1 teaspoon vanilla 2 Tablespoons raw honey


1. Combine all of the fruit in a bowl.


2. Mix the Greek yogurt, vanilla and raw honey in a bowl. Drizzle on top of fruit.

Super Berry Spinach Salad


with Toasted Coconut Topping This salad not only has the great benefi ts of the “Super- fruit”, Blueberries, but also the dressing is as good for you as the salad. It’s made with Coconut Oil, which has been recently proclaimed as having anti-infl ammatory and anti- fungal properties.


Serves 2 Salad


6 cups of Fresh Organic Baby Spinach 3/4 cup Fresh Organic Blueberries


4 TB Goat Cheese, Crumbled 2 TB Chopped Pecans or Walnuts 2 TB Uncle Sam’s Flax Cereal


¼ cup Dried Coconut Flakes (not sugared)


Dressing ¼ cup Fresh Organic Blueberries ¼ cup Balsamic Vinegar 1 TB Saffl ower Oil 1 TB Organic Coconut Oil 2 TB Fresh Lemon Juice 1 Packet Stevia if desired ½ tsp. Sea Salt ½ tsp. Freshly Cracked Pepper


1. Lightly toast nuts, cereal and coconut fl akes in a pan sprayed with earth-friendly cooking spray. Set aside to cool.


2. Mix dressing ingredients together until well blended, Toss into salad. Divide equally onto two plates and top with toasted ingredients.


3. Serve with a lean protein if desired.
