News Caines to run own hotel By April Hutchinson
Chef Michael Caines is to pursue a new venture by opening a hotel. Having worked with many hoteliers on
overseeing their often Michelin-starred restaurants, the chef is now planning to open Lympstone Manor in Devon early next year. He spent 21 years at Devon’s Gidleigh Park hotel
and earned two Michelin stars, but finished there in January and will now work on his own projects. Caines purchased Courtlands, a Grade II-listed Georgian mansion, in 2015, and is currently
renovating and extending the property to create Lympstone Manor, a country house hotel that will overlook the Exe estuary. It will have 21 rooms and a 60-seat fine dining restaurant. He said: “This project marks the realisation of
a long-standing dream in which I wanted to be able to express my own vision of hospitality in all aspects, with my passion for food and wine at its heart.” Caines is also working with the new owners of
Pale Hall in Llandderfel, North Wales as they prepare to open the hotel for this summer on the edge of Snowdonia National Park. Telecoms entrepreneur Alan Harper and wife
Angela, a former head teacher, are now working on converting Pale Hall – an historic, Grade II- listed country house within a 50-acre estate – into a fine dining, 18-room hotel, with Zoffany furnishings and William Morris prints. Caines will work with the couple to create the fine dining restaurant and appoint the head chef. Pale Hall is regarded as one of Wales’s most
important surviving country houses, having played host to the likes of Queen Victoria – the bed she slept in is still there – and Winston Churchill, who is rumoured to have played snooker in the wood-panelled Robertson Suite when he stayed. Caines also operates Pearls by Michael Caines within the 382-bedroom Jumeirah at Etihad Towers in Abu Dhabi, and Michael Caines restaurants at Kentisbury Grange hotel, near Barnstable, Devon.
Give it a spin with Goodland
Vinyl has been making a huge comeback (also helped this year by Vinyl, the 70s music-biz drama by Martin Scorcese and Mick Jagger on Sky Atlantic) as a modern generation embrace this magical old-school musical format. Now a hotel in southern California has even introduced a record shop into its lobby. The Kimpton Goodland Hotel in Goleta has partnered with LA-based VYNL, a music discovery subscription service, to create the space, which features dozens of titles that can be enjoyed during a stay in one of the 158 rooms (each of which has a record player) or purchased to go. The hotel embraces the bohemian vibe further with its vintage house car and launch Positive Spin package includes two cocktails upon arrival (from £138pn).

Having only taken on his role in December, Philippe Zuber has already visited all nine One&Only hotels – and its five locations for future openings. He’s clearly on a mission. “I visited our resorts to meet people there and to thank them for helping us put One&Only where it is today,” he says. “But what surprised me the most was the level of engagement of the staff was higher than I would ever have anticipated.” We meet in the new Penthouse suite at The
Arts Club in London; Zuber’s in town for the annual One&Only roadshow. He says: “The UK is a premier market for our properties, so it’s a no-brainer to come here as much as possible.” Resorts freshest from the decorators are
Ocean Club in the Bahamas (right) and Palmilla in Mexico; struck by hurricane Ollie in 2014, it used the opportunity to emerge bigger and better. Two more resorts are planned for Mexico. But before that, Reethi Rah is being
redesigned in time for Christmas. “It is only 10 years old.. but it is important to do this kind of work before the guest even starts to notice it needs doing,” says Zuber. The original designer, Jean Michel Gathy, is revisiting the Maldives for the work and is also creating the group’s first hotel in Europe – Portonovi in Montenegro. But what of Le Saint Geran in Mauritius? Surely
the 40-year-old hotel is in need of a freshen-up? “Trust me, it’s on the top of my agenda,” he says. “It is unique. And we need to help it stay that way.”
