Good Eats IN SOUTHEAST OKLAHOMA
Pumpkin Bread Contributed by Maxine Byrd, CEC’s Holiday Collection Cookbook
INGREDIENTS 1 tsp nutmeg
1 tsp. cinnamon 2 tsp. soda 1 ½ tsp. Salt 3 1/3 c. flour 3 c. sugar
4 eggs 1 c. oil
1-lb. can pumpkin ½ c water
1 c. chopped pecans
Directions In large bowl, mix first 6 ingredients. Mix next 4 ingredients and add dry ingredients. Mix with mixer and add pecans. Pour into well greased loaf pan. Bake 350°F. for 1 hour.

INGREDIENTS ½ c salt 1 c. flour
2 tsp. cream of tartar 1 c. water
1 T. cooking oil Food coloring
DIRECTIONS In thick-bottomed plan, mix salt, flour, and cream of tartar. Add cooking oil to water and a few drops of food coloring. Mix all ingredients together. Cook ingredients over low heat, stirring until it forms a thick ball. Cook for approximately 3 minutes. Turn onto table and knead. Keep in sealed container.
