Your eyes are drawn to the large glass chandeliers and the cascading walls of water, reflecting the flowing nature of the bay which is seen through the floor to ceiling windows. Te resort is structured in a crescent shape, with guest accommodation overlooking the two outdoor swimming pools and beach on one side, and the hotel’s 18-hole Championship golf course on the other. We were housed in a deluxe double room with a balcony offering fabulous views of the Adriatic. Te most prestigious grade of room comes in the form of the two presidential suites. Te respective suites have a surface area of 260 sq m, with an outdoor terrace around twice that size. Te suites are near enough identical, it is just their motifs which differ – one being black, the other white. As you would expect, these suites

located on the beach, just a stroll away from the hotel and offers speciality fine dining overlooking the Adriatic. We dined at the Dijana on our first evening and took full advantage of the chef ’s recommended dishes, of Istrian scallops au gratin with Istrian olive oil and tartar of salmon with crème fraîche and grilled focaccia bread to start, followed by fillet of veal on creamy black truffle potatoes and morel sauce, with New Zealand rack of lamb on green bean ragu. comfortable walking distance of local restaurants and bistros, providing further incentive to explore this beautiful coastline. With an evening planned with our hostesses Lena and Ursula, on our second evening we ventured out to Toni Restaurant, a renowned local seafood establishment just 15 minutes from the resort in Savudrija. We were welcomed by Toni and his family of staff and treated to a delicious medley of seafood prepared by Toni himself. Toni has cooked for royalty and distinguished ambassadors and I almost found it quite surreal to discover such culinary expertise in a relatively quaint corner of the world. Te Croatian people are rightly proud of their vast array of local produce, which includes a specialised breed of beef as rare as Wagyu. cuisine home with me. We couldn’t leave this fabulous resort without sampling the sumptuous Carolea Spa, which features a Roman bath and an ice cabin amongst its impressive array of facilities. Nestled amidst the decadent tranquillity there is also one of the largest flotation tanks I have ever seen. We opted for the Spa’s signature body massage with local oils, and also made use of the fully equipped gym and indoor pool. Together with the Championship golf course, there are also four tennis courts at your disposal, providing endless scope for sporting excursion.
