Carob-based low glycemic sweetener


A carob-derived sweetener has been developed by foodtech start-up, CarobWay. The zero-waste sweetener, which is made from deseeded


carob pods and is available as a syrup, has already demonstrated its superior sweetening capacity in various food applications including gummies and in energy bar prototypes. “Our natural sweet alternative draws on all the

occurring sugars, namely polyol D-pinitol, as well as trace soluble fibers and polyphenols. D-Pinitol bears a sweetness about 50% that of sucrose. Research has shown that people who consumed D-pinitol rich carob syrup and powder had lower blood glucose levels compared to the control group. The researchers suggest this effect could be owed to its possible insulin-like function, and natural antidiabetic and insulin regulating abilities.
