undertake the chocolate mass by spread action, so that to obtain the achievement of the desired organoleptic features. The addition of vegetal fats and emulsions are managed automatically, so there is no need for manual operators.
3. Sustainable solutions
chocolate refiners introduced back in the summer – the HFT series. The HFT is capable of efficiently processing masses based on sugar or sugar substitutes, fat creams, compounds, and chocolates with increasingly complex recipes. It is an “extremely flexible” 5-roll refiner that allows the working
conditions to be adapted to the product and guarantees what is described as “the best grinding results and particle size fineness”, even on products with a different consistency from traditional ones. The new HMI and some new electronic devices also improve the efficiency and the performance of the motors. When it comes to dry conching, SACMI’s HOMEGA series, double shaft horizontal conche, and the ALPHA series, single shaft horizontal conche is available in different sizes and can reach up to nine-tonne capacity. Both type of conches use mixing and cutting stirrers to intensify the efficient shearing action for fat masses, compounds, and real chocolate. The rotation speed allows for maximum available power in the most important phases, both dry and plastic conching. The speed control is automatically managed by the PLC, which
controls the required processing cycle of the product, keeping the accurate heat transfer control by a high precision thermostatic water unit. When the consistency of product is reached, the electronic PLC control will reverse the rotation of the shaft, allowing the stirrer to

In September, we saw Kwik Lok introduce what has been described as the ‘world’s first’ home compostable bag closure solution. Fibre-Lok was announced as an environmentally-friendly alternative to plastic bag closures. It’s composed entirely of natural cellulose wood and cotton fibres, and it provides the same reliability as the traditional Kwik Lok, while aligning with European sustainability standards for home compostability and plastics reduction. Don Carrell, CEO, Kwik Lok, commented: “Fibre-Lok is another important step in Kwik Lok’s mission of transitioning the industry toward a sustainable future through innovation. “We are committed to providing the tools our clients need to meet their sustainability goals. Whether it is greenhouse gas reduction, plastic elimination or compostability – we have the most effective suite of solutions on the market. Fibre-Lok is a significant step forward in the plastics reduction and compostability journey.” This innovation comes as the European Union has directed businesses to significantly reduce their use of plastic. Kwik Lok developed Fibre-Lok to meet these goals without sacrificing the functionality, quality, and durability that end users demand.
2. Intelligent refining
At the very beginning of 2021, MacIntyre Chocolate Systems unveiled its new, unique machine ¬– The RC500i. The RC500i has been proven to produce milk compound in a three-
hour cycle time to a particle size of 30 microns (based on using sugar of 250 microns). For a 20-micron finish, the cycle time increases to only five hours, including time to load and mix the ingredients but excluding time needed to mix lecithin / flavours and discharge. This means the
