SMOOTH CHICKEN LIVER PARFAIT FLAVOURED WITH A RED WINE AND THYME REDUCTION with Martin Hoyle, of


The Buck Inn, Grindleton.


A NEW young chef has taken over the kitchen at the Buck Inn, Grindleton, and is keen and enthusiastic to make sure the food served is good quality, tasty and reasonably priced. Martin Hoyle was born in Waddington and


attended the village school and Ribblesdale High School, before embarking on his career by attending Blackburn Catering College. While at college he worked part-time at the


Waddington Arms, eventually, after qualify­ ing, running the kitchen on his own. He then spent four years at the Spread Eagle, Sawley, before deciding to take time out to travel round Europe, hopefully to gain experience of different local foods. He visited Belgium and Germany, finally ending up in Prague before returning home. Now at the Buck Inn he his busy devising a


new menu which will include old time favourites and traditional Lancashire dishes together with something a little different. He said: “The steak and ale pie is always


popular and I have found, much to my sur­ prise, that the pan fried calf’s liver served with


sauteed spring onions has touched people’s taste buds”. Home-made soup is always available or the-


Italian air dried ham accompanied by shaved Parmesan and pear makes for an unusual starter. Traditional pork and leek sausages and mash are served with onion jus and home­ made lasagne is a good alternative. Martin makes his own beer batter for the haddock, making it a traditional fish and chips treat. Food is served lunchtime and in the evening


during the week and on Friday and Saturday nights there will be several specials available. Sunday lunch will feature at least two roasts of the day and a new innovation will be high teas served through until 6 or 7 p.m. As time goes by Martin will introduce new and different dishes popular with the cus­

tomers. He likes to be kept busy and well-pre­ pared for each session in the kitchen, as each dish will be freshly cooked to order. Here is Martin’s recipe for chicken liver par-


fait. Ingredients


• 500g unsalted butter • 2lb washed chicken livers • 200ml red wine • fresh thyme • 5 eggs • 2tspsalt • 2 tsp ground white pepper Method


1. Add thyme to red wine, and simmer until


reduced by half. Remove thyme. 2. Liquidise chicken livers until smooth. 3. Add eggs to the chicken livers and blitz


again, season with salt and pepper. 4. Melt the butter in a small saucepan and


slowly pour onto the chicken livers in the liq­ uidiser. Next add the red wine reduction. 5. Pass the mixture through a fine sieve into


a terrine mould or loaf tin. 7. Place the terrine or loaf tin in a roasting


tin, half filled wdth water, and cook for 40 min­ utes until firm. Chef’s tip: Serve simply with crusty bread and red onion marmalade or tomato chutney.

The Lerner and Loewe musical “My Fair Lady” was adapted from Bernard Shaw’s play “Pyg­ malion” and tells the story of Eliza Doolittle, a poor Cockney flower seller in Covent Garden, where she meets Professor Henry Higgins.
