ROAST LAMB AND SUMMER VEGETABLES WITH MINT PESTO


LAST weekend my husband and I enter­ tained some friends David and Sue King, from Brighton, who we had invited to an open day at Clitheroe Golf Club on Sun­ day. We met David and Sue many years ago on holiday inEgypt and have kept in touch ever since. I had planned to make this roast lamb


and summer vegetables dish, but my hus­ band said: “We are not having a stew” so we had a leg of lamb instead, marinated in in a herb, anchovy and balsamic vinegar paste, along with roasted tomatoes and runner beans straight from the garden. I t was Mediterranean weather so we had


th e f irs t course of barbecued scallops ^vrapped in bacon and asparagus outside in the sunshine. Researdi out today shows that Britons


are favouring the flavours of the Mediter­ ranean this summer. Time to cook: Approx­ imately 25-30 minutes


Ingredients (Serves six)


Oven temperature: Gas mark 5 ,190°C,


375°F • 675g (IVslb.) lean lamb neck fillet, or


boneless shoulder steak, cubed O 450g (lib) new potatoes, peeled and


quartered with KIABCIAMORRIS


• 3 garlic cloves, peeled and crushed 9 2 small auber^es, peeled and cut into’


chunks 9 2 small red peppers, cored, deseeded and cut into large chunks


9 (4tbsps) extra virgin olive oil 9 Salt and pepper

, 9 (4tbsps) flaked almonds, toasted 9 1 large bunch frrah mint leaves, stalks


removed 9 (2tsps) Dijon or wholegrain mustard


9 (6tbsps) extra virgin olive oil Method


1. Parboil the potatoes in boiling salted


ivater for 5-7 minutes. Drain and set aside. 2. In a large roasting tin, mix together


the lamb, potatoes, garlic, aubergines, pep­ pers, oil and seasoning then spread out evenly. 3. Roast for 30-35 minutes until the lamb


is melting tender and the vegetables are cooked. From time to time during cooking shake the pan. 4. Prepare the pesto. Put the almonds,


mint leaves, mustard and seasoning in a food processor/blender and blend to a rough paste. Gradually add the oil in a steady flow. Season well. 5. Spoon into a bowl and serve with the


lamb and plenty of garlic bread. Tip: Use a rolled lamb shoulder joint as


an alternative.
