of scallops, accompanied by a cucumber spaghetti and a saffron emulsion, which head chef Greig Bames has described how to make as Dish of the Week. Cosset Brut was served
' with this fish emrrse which was served chilled, and the scallops were large, juicy and very flavou^me. Cosset Brut is crystal-clear and a pale golden yellow with a constant stream of lively bubbles. On the nose it has fresh floral notes, such as honeysuckle vristeria, white jas mine and vine blossom, giving way to fruity aromas and the first taste is invigorating both

With this in mind we went to two of our negotiants to put our 125 anniversary special selec tion together and after much tasting we have selected a range of about 40 wines - not many of the grand names, but wines we thought offered good value and had a personality. 2001 Bordeaux at £4.79, is a gold medal winning wine from an estate owned by the Meynard family and is situated in the Entre- Deux-Mers region, just south of Bordeaux city. The wine is a blend of 50% merlot, 30% cabernet sauvignon and 20% caber net franc. The wine is only 30% oak aged so it has a fruitier taste. It is dark

Chateau Cantc-Grivc Cotes de Castillon, £6.99.
This vineyard is located on the slopes and table-lands of the Ste Colombe village, four miles to the east of St Emilion. The wine is made from 50% merlot, 38% cabernet franc and 12% cabernet sauvignon, again some oak ageing. It is a bright ruby red
colour and has an intensive nose of black cherries and plums, the palate is well- balanced with supple tan nins with a rounded soft finish.
