identified. She is Mrs Chloe Bray, of Up Holland, and each week she
visits friends in Grindleton for an afternoon quiz over a quiet drink,
iwhile one of her dishes cooks away ’twixt Ribble and Lune”.

All three of the recipes have one
(serves six) Ingredients
• 21b. stewing meat. • IV-joz. flour
• 2 tbsp oil • 8oz. to lib. onions (sliced) • 2 chopped cloves garlic
• 6oz. mushrooms (sliced if large) arcia M
• 1 chopped green pepper • 2 tbsp apricot jam
• 'A pint red wine • Vz pint stock
Method 1. Coat meat in seasoned flour
■ and brown in oil. 2. Add remaining ingredients
including any flour left. Bring to
the boil. 3i Transfer to a casserole and
serving. cook'in a moderate oven for two
and a half to three hours. ,4. Adjust seasoning just before

IN the North of Spain we find one of my favourite wine-producing regions, a very, pic turesque valley with the river Oja flowing
With wine writer Andrew Byrne, of Byrne’s Wine Merchants,
through its middle. Before 1871, Rioja, Spain’s most famous wine-pro
ducing area, was producing little better than table wine. But as the phylloxera blight spread through the vineyards of France those vineyards moved south ward to escape it, bringing capital, more advanced equipment and sound scientific knowledge. So the
golden age of Rioja began. •Domaine de Montalvo 1995 (£4.89) is a limited
release wine from the vineyards at Torre Monalbo, located within the heart of the Rioja Alta. I t is made from selected Tempranillo, Granacha and Graciano grapes, which have undergone a long fermentation to

extract a good depth of fruit, colour and complex tannins. The whole was harmonised by traditional ageing in the domain’s cellars in oak. Montalvo Tmto is a truly classic Rioja, displaying concentrated rich and vibrant wild fruit characters, enveloped by spicy aromatic vanilla flavours. Many of the traditional dishes of this region are
