of Indian street food in Britain, bringing an array of original local delights from India’s roadside eateries into a contempo- rary, stylish setting long before the trend took hold. Camellia and Namita Panjabi are
the food supremos at the restaurants, and have spent over 40 years combing their way through the true sources of the best Indian food: street stalls, maharajas’ palaces and the kitch- ens of regional gourmets. Te dishes served at Masala Zone are the prod- uct of a depth and understanding of Indian cuisine across the country’s many regions. With their passion to do the best,
the sisters select key ingredients from the best spice farms in India after the harvest, which are then shipped to the UK. Dishes are then prepared as they should be, using a complex combina- tion of these spices in a carefully or- chestrated sequence. Te menu features a panoram-

Favourites from street stalls across India’s regions include many reinvented dishes such as Ma- dras chicken 65, Delhi jalebi chaat and Goan spiced crab cakes, as well as the famous Lucknow dahi puri, Jaipur gol guppa pops and Bombay pao bhaji with fresh, home-baked pao bread.

la Zone is the thali — comforting Indian home cooking. Beautifully served on a stainless-steel platter, each irresistible little dish is an ex- plosion of flavour and adds its own magic to a perfectly balanced, nutritious meal. Curries journey across India’s di-
verse regional cuisines. Each is craft- ed with local knowledge and love for individual traditions, to preserve its deliciously distinct character.
