Haven Distillery — the Heart of Herefordshire

Founded in 2015 by Duncan and Alex Fox, Haven Distillery prides itself on producing truly small batch artisan spirits

Using a mix of traditional vapour infusion and vacuum distillation, Haven Distillery produces around 100 bottles of Sly Gin per batch and has three

core expressions

— London Dry, Lemon Verbena and Pink Grapefruit. All expressions are a London Dry

base and nothing is added post dis- tillation, except to dilute to 43% abv. Using herbs and lemon verbena

grown in their garden and sourc- ing lemon verbena from gardens in Herefordshire, the Hutchinsons ethically source all key botanicals that are used within the spirits. No

artifi cial fl avours, additives

or sugars are added to the award-winning gins. Kim Hutchinson (master

distiller/owner from 2025) says: “Each batch takes three days to produce — from distillation, hand bottling, labelling, waxing and numbering all bottles indi- vidually. We’re proud to produce everything here in my home county of Herefordshire.”

Award-winning sustainable red wine from the UK

Amid today’s climate of sustainability and the movement towards carbon neutral, we all need to buy more local produce

THE BIRTH OF DIVICO IN THE UK In 2019, Warehorne Vineyard, in Kent, learned about a new red grape variety called Divico, which had re- cently been developed in Switzer- land. T e Swiss government spon- sored research to create a grape capable of producing a full-bodied wine to suit the nation’s climate, which is similar to the UK’s in the summer months. Peter Constable, the family

owner of Warehorne Vineyard, ex- plains: “I bought a bottle of Divico from Switzerland and was blown away by its dark purple colour, depth of fl avour, unique charac- teristics and outstanding quality. I realised that this could be a game changer for English red wine.”

SUSTAINABLE WINE: BETTER THAN ORGANIC? T e second objective for Warehorne Vineyard was sustainability. Divico is resistant to fungal diseases, which eliminates the need for chemical sprays and reduces diesel consump- tion during cultivation. What’s more, the wine is made and stored at the vineyard.

CREATING A NEW FUTURE From 2020 to 2022, Warehorne Vine- yard planted 8,300 Divico vines, creat- ing the UK’s largest Divico plantation. T e fi rst divico wine was

pro-

duced from the 2023 harvest. In 2025, this vintage was entered into the Decanter Awards, the world’s most respected wine competition, where it won a bronze medal. Decanter had this to say about it: ‘fruit-for- ward wine, deep extraction giving black fruit, spice, baked earth, pep- per and light soy fl avours. Soft, dry tannins complement the acidity’.
