MIX IT UP CGA’s figures show that the pornstar mar- tini now accounts for almost 15% of cocktails served within the on-trade, compared to the once-dominant mojito, which now claims only 13% of cocktail bar-calls. The data also identi- fies the top 10 serves that outlets should list on drinks menus, including mojito, pornstar martini, espresso martini, daiquiri and spar- kling and lighter drinks such as the bellini. The growth of both craft spirits and cocktails has created opportunities for innovation and excitement from products which can work equally well when mixed with a spirit, in a mock- tail, and as a standalone soft drink. However, entrepreneur Peter Spanton, the former restau- rateur who launched his own range of mixers in 2012, believes that too few launches into the sec- tor recognise the high levels of consumer and operator expectations driving the market. there’s a genuine story behind their drink, whether that’s a classic cocktail, or increas- ingly a mixed soft drink that delivers the same premium, engaging experience, rather than leaving them feeling that a non-alcoholic choice is second best.
