2 (9.3 oz) bags Nature’s Promise® Organic Hard Cooked Eggs or 12 hard-boiled eggs ¼ cup mayonnaise 1 tbsp Dijon mustard
2 tsp apple cider vinegar ¼ tsp paprika 8 butter lettuce leaves 8 slices whole- wheat bread
STEP 1 Place the hard-cooked eggs in a large bowl and mash gently with a fork. Stir in the mayonnaise, mustard, vinegar, and paprika. Season with salt and pepper.
STEP 2 Layer 1–2 lettuce leaves on 4 slices of bread. Divide egg salad among sandwiches and top with bread slices.
TIP To make your own hard-boiled eggs, place the eggs in a large pot and add enough cold water to cover by 2 inches. Heat to a boil on high. Cover and remove from heat. Let stand 12 min. Drain and rinse with cold water until cool.
