COLD AVOCADO- CUCUMBER SOUP
PREP TIME 10 MIN. – COOK TIME 1 MIN. READY IN 11 MIN. – SERVINGS 4
2 avocados 2 English cucumbers 1 cup low-sodium chicken broth 1 cup plain nonfat yogurt
¼ cup green onions 2 tsp lime juice ½ cup ice cubes 1 cup cubed ham ¼ cup thinly sliced radishes, to garnish Olive oil, to garnish
STEP 1 Halve and pit the avocados. Roughly chop the cucumbers. To a blender, add the chicken broth, yogurt, green onions, lime juice, avocados, and cucumbers. Season with salt and pepper. Add the ice cubes, and blend 1–2 min., until smooth. STEP 2 Microwave the ham 30 sec.–1 min., until warm. Pour soup into bowls. Garnish with ham, sliced radishes, and olive oil.
