STRAWBERRY AND BALSAMIC BRUSCHETTA
PREP TIME 20 MIN. – COOK TIME 4 MIN. READY IN 24 MIN. – SERVINGS 10
1 baguette, cut into ½-inch slices 3 tbsp olive oil 2 cups strawberries, hulled and finely chopped
3 tbsp balsamic vinegar 1 tsp sugar 1 cup ricotta ¼ cup loosely packed fresh basil leaves, thinly sliced
STEP 1 Set grill to medium-high. Brush the baguette slices on both sides with the oil. Grill 1–2 min. per side, until toasted and grill marks appear. Remove from grill. STEP 2 In a medium bowl, stir together the strawberries, vinegar, and sugar until sugar dissolves. Season with salt to taste. STEP 3 Spread the ricotta on baguette slices. Spoon strawberry mixture on top. Season with pepper to taste. Garnish with the basil.
