WITH TORTELLINI French onion soup is tasty, but not much of a main course on its
own...so we added savory cheese tortellini, to put an Italian twist on this French classic.
PREP TIME 5 MIN.–COOK TIME 20 MIN. READY IN 25 MIN.–SERVINGS 4
1 lb onions ½ cup fresh thyme 4 tbsp butter 2 tbsp olive oil 2 tbsp minced garlic
3 cups vegetable broth 1 (9 oz) pkg cheese tortellini ¼ cup shredded Parmesan cheese
STEP 1 Cut the onion into thin rings and pick the leaves from the thyme. Heat the butter and oil in a large, heavy pot. STEP 2 Add the onions, garlic, and thyme. Cook, stirring occasionally, for 5 min. or until onions are soft and begin to caramelize. STEP 3 Add the broth plus 3 cups water and bring to a boil. Reduce the heat and simmer for 10 min. Season with salt (in moderation) and pepper. STEP 4 Add the tortellini and cook for 5 min. or until tender. Divide the soup evenly among 4 bowls and top with shredded Parmesan cheese.
