HOME FRIES WITH EGGS
AND BELL PEPPER Breakfast for dinner is always a winner. Potatoes, eggs, and fresh diced veggies mingle in this single-pan breakfast that is just as satisfying at dinnertime.
PREP TIME 5 MIN.–COOK TIME 25 MIN. READY IN 30 MIN.–SERVINGS 4
1 red onion 1 red bell pepper 2 tbsp butter
1 (1.4 lb pkg) Simply Potatoes Diced Potatoes with Onion 4 large eggs
STEP 1 Halve the onion and cut into thin half-rings. Cut the pepper into small strips. STEP 2 Heat the butter in a large skillet over medium heat and fry the onion and pepper for 5 min., or until soft. Add the potato cubes and cook for 12 min. on medium-high heat, stirring frequently. STEP 3 Using a spatula or spoon, make 4 indents in the potato mixture. Break 1 egg into each indent. Put the lid on the pan. Cook on low for about 8 min., until the egg white is firm and the yolk is semi-soft. Sprinkle with salt (in moderation) and pepper.
