The bigger picture – regenerative farming Besides the more immediate footprint reductions of decreasing the price of sustainable plastics, increasing plant-based dishes in menus and implementing technology to decrease food waste, the longevity of our planet will be defined by our ability to create a regenerative environment for our crops. Regenerative farming is the conservation and rehabilitation of our farm lands, focusing on preserving the health of the top soil, increasing biodiversity and maintaining a healthy water cycle for our crops. These practices require a drive away from cost-focused strategy, and towards measured sensibility towards the environment. According to Wright: “More investment is needed so that regenerative practices can become mainstream.”

Unfortunately, the cost intensive regenerative practices will realistically be kept at arms length by most caterers at present, given the rise in costs and inflation. As Watts puts it: “Contract cost, understandably, currently has a far larger weighting in contract decisions than previously.”


Part of millions of people’s daily routines, sustainable efforts in catering can play a pivotal role in broader ecological efforts. However, rising costs and inflation are forcing businesses to refocus elsewhere and potentially neglect sustainability. There is a path forward. Through the use of technology to reduce waste and clever menu design, catering companies can keep striving for more sustainable ends, all the while remaining economically viable.
