In 2015, Levy Restaurants UK signed a new partnership to design and manage a wide range of new eating and dining spaces at the Imperial War Museum’s (IWM) branches; IWM Duxford, a world-renowned aviation museum and Britain's best preserved wartime airfield; Churchill War Rooms, housed in Churchill’s secret headquarters below Whitehall; and the Second World War cruiser HMS Belfast.


As part of the contract, Levy Restaurants UK has worked closely with IWM to create tailor-made catering concepts to enhance the retail catering offer for visitors through innovative ideas. This includes:


• Introducing a new deli and a destination bar and on-boat café at the HMS Belfast. We designed a bespoke menu with renowned chef Tom Aikens, focusing on seasonal and local produce. Seasonal sharing boards, delicious nibbles and a line-up of cocktails, spirits, beers and wines were developed to heighten the customer experience.


• At the IWM Duxford we developed three public restaurants: The Armoury Café, The Workshop Restaurant and the American Museum cafe, along with mobile units catering for peak periods and air shows. Each outlet has been refurbished to improve aesthetics, food and service on offer. Guests can find versatile and diverse menus from hot seasonal British food, freshly cooked classics and afternoon tea and cakes.


• We also developed a 40 cover café and mobile unit at The Café Churchill War Rooms to provide a delicious range of food and drink options to visitors. The café specialises in classic British food, home-cooked pies and freshly- baked cakes based on traditional British recipes.


The innovations implemented since the start of the partnership have enhanced the customer experience through the delivery of outstanding food, service and targeted investment. At the bar and deli on

board HMS Belfast for example, there was a 57% year-on-year increase on retail sales and spend on transaction growth of 47%.


Peroni Ambra at


Somerset House Somerset House is one of London’s top contemporary arts and culture venues, attracting over 3million visitors every year. Over the course of our partnership, we have worked side by side with the Somerset House team, going above and beyond to meet their requirements to provide a uniquely personal service.


This summer, to celebrate the launch of Peroni Ambra, the innovative new drink offering from Peroni Nastro Azzurro to the UK earlier this year, we worked closely with the brand and the venue to launch the ‘Somerset House Terrace, Presented by Peroni Ambra’ to the public.


Capturing the essence of Italy, guests are


transported to the rural Chinotto groves of Liguria.


The Somerset House Terrace Bar Presented by Peroni Ambra, which will be open until the end of September, gives guests an opportunity to discover the authentic tastes and rare ingredients of North West Italy.


The open air, riverside space with its sweeping views across London has been beautifully transformed into an immersive Italian setting. Capturing the essence of Italy, guests are transported to the rural Chinotto groves of Liguria, North West Italy. To celebrate the versatility of the Chinotto fruit, as well as the Italian tradition of the aperitivo occasion, Master of Taste, Francesco Mazzei, has curated a delicious, bespoke aperitivo menu, perfectly paired to complement the rare taste of Peroni Ambra.


The 02 The O2 attracts approximately 9million visitors a year and Levy Restaurants UK provides catering for all areas in the arena including: 96 suites and premium areas, four


Suite Bars, four pantries, two kitchen concessions and 24 catering units.


In 2017, we opened 11 new bars and food outlets as part of a redevelopment plan to create a customer-centric food and drink destination. The objective was to develop a targeted offer to suit the individual requirements of a different range of customers and to ensure we are continually providing excellent catering options.


All bars and food areas are designed to offer flexibility through digital screens, product packaging and staff uniforms, all of which change depending on the event being catered for. Our food offer has been created around seven different genre groupings with each of the seven tailor-made menus offering dishes, specifically created for a particular customer group and type of event. For example, if customers are attending a Hip-Hop concert, they will be able to enjoy a range of food options from Crispy Duck Hirata Buns to BBQ chicken pizza. Whereas those attending a pop concert will be able to look forward to options from fresh grilled chicken fillet to halloumi wraps. In addition to this, we have worked closely with our suppliers to develop a bespoke drinks list that can change depending on the type of event being catered for.

Each venue, museum, visitor attraction and heritage site that we work with have their own character and customer base, and we always work hard to create bespoke food and drink offers to suit individual requirements.
