Soups – of all these easy ways to incorporate greens, this must be the easiest. If you are heating up some soup or making your own, add a handful of leaves 30 seconds before the soup is ready. The great thing with these soft leaves is they take very little cooking so you just need to stir them through something hot and they are practically ready. Tomato soup with dark green leaves as a contrast are a joy to the eyes as well as the taste buds. A chunky vegetable soup or a spicy Tom Yum broth will all benefit from a healthy addition of green leaves.
Rice dishes – risotto, pilaff, paella, kedgeree, biriani; in our house they are all called Rice & Bits but are a great way of using up small amounts of ingredients. The latest favourite is rice cooked in chicken stock with onion, garlic, broad beans (frozen), crab meat left over from one of our fish courses and lots of shredded chard stirred through at the end of cooking with a lemon zested over the top for a citrussy hit.
Pasta dishes – add to macaroni cheese or tuna, tomato and pasta bake. Stir into pasta with pesto or just wilt some leaves into some olive oil, garlic and a pinch of dried red chilli before
tossing into a big bowl of spaghetti and slurping merrily.
Curries and Casseroles –Beef stew with some soft greens added just before serving adds a zing of colour and freshness of flavour in a slow-cooked recipe. Spinach is a big ingredient in many curry recipes but if you don’t have any, don’t worry – chard, watercress, lettuce will all work well.
I’m sure you’re getting the idea by now
but if you have something hot and you want to incorporate more green leaves into your diet, just stir them through at the end of cooking. Even if the recipe doesn’t have any, just stir some leaves in to get your hit of these super-greens then you don’t have to remember to eat them as you just will.
So, that’s ticked the greens off eating the rainbow, now for the other six colours...
