business which opens in November. When the news of a July 4th re-opening came, we were more than ready. We had kept all of our staff up to speed with the business in our weekly updates and a whole company Zoom call with hundreds of participants,. It was amazing. The one thing on our minds the whole time was safety - how could we be the most Covid secure place but also retain the integrity of our hospitality. We added extra staff solely dedicated to cleaning, created one way systems, enhanced cleaning regimes, gave personal sanitisers to staff and placed sanitisers all round the restaurant for guests. We needed to win customer confidence, which we did. This was further helped by the

Eat Out, Help Out scheme in which Rockfish took part. Once the government had effectively said “ it’s safe to go to restaurants “ the floodgates opened; within 48 hours of our email to say we were partaking in the scheme we took 20,000 reservations from people wanting to take advantage of Rishi Sunak’s generosity - it was crazy. Sadly, just before opening, the Seahorse experienced a major flood from a burst water main which wrecked the dining room, rendering it out of action for months. We plan to re-open in November. This meant that we

had the tent on the embankment which has been a huge success, not just for us, but Dartmouth itself and our fellow operators in the town - let’s hope it can stay. Over the summer, the South West has been packed with visitors and it’s provided a major boost to the business since re-opening. I know this is the same for many other restaurants as well. I don’t think I have ever seen Brixham, Torbay, Dartmouth, Plymouth, Poole & Weymouth so busy. Out of this will come some good; people have changed their priorities & Covid will leave a legacy of enhanced focus and care in all our operations. Covid has given us a chance to try new things, some of which we got right and some we got wrong. Our guests have been really understanding with all that we tried - except switching to fries in some sites, where making them was not Covid secure enough - but chips are back

all round now that our customers told us we had to! Making any fundamental changes like this in normal times would be like standing in front of a moving train. In some ways Covid has become a watershed to re-

consider and re-prioritise what we do and also remind us of our fragility not only in business but of ourselves too. “
