Hooray Sip, Sip Fig and Honey Sparkle MAKES 4


If your New Year celebrations calls for a night in with family and friends, say sip, sip hooray to 2020 with these delicious cocktail ideas.


Pomegranate and Lime Gin


MAKES 1


Ingredients: 1oz Pomegranate juice Squeeze of lime juice


2oz Gin (could be replaced with vodka if preferred) Pomegranate seeds Tonic water Crushed ice


Method:


In a cocktail shaker filled two thirds with ice, squeeze your lime, add the gin and a small handful of pomegranate seeds (about 20). Shake until the pomegranate seeds release their juice. Fill a tall glass with crushed ice and pour in the pomegranate juice. Strain the cocktail into the glass.


Top with tonic water and garnish with pomegranate seeds and slices of lime.


Spiced Apple Whisky Sour


Method: MAKES 2


Ingredients: Cinnamon Syrup: 1 cup Water


1 cup Granulated Sugar 1 Cinnamon Stick Cocktail: 4oz Bourbon 4oz apple cider


½ oz lemon juice (preferably freshly squeezed) 1oz cinnamon syrup 4 dashes of orange bitters To garnish (optional): Slice of apple

First, make the cinnamon syrup by boiling the water and sugar in a small saucepan over medium heat, stirring constantly until the sugar dissolves. Boil for 3 minutes and remove from heat. Add the cinnamon stick and allow to fully cool. Discard cinnamon stick and keep the syrup sealed in the refrigerator. For the cocktail, combine the bourbon, apple cider, lemon juice, syrup and bitters in a shaker with ice. Seal and shake vigorously. Strain into two Old Fashioned/ Rocks glasses over ice and garnish.


Ingredients: 6 fresh figs, diced or 1 tablespoon fig preserves 1 small, ripe red plum, diced 2oz elderflower liquor Juice from 1 lemon 2-4 tbsp honey, depending on your taste 1 tbsp fresh thyme leaves, plus more for garnish Prosecco, for topping


Method:


Add the figs, plums, elderflower liquor, lemon juice, honey, and thyme to a cocktail shaker. Using muddler, gently push the figs down until they release their juices and are lightly smashed. Add ice and shake vigorously. Strain into glasses and top with prosecco.


Garnish with figs and fresh thyme.
