‘New café in town’ and down

There’s a new coffee shop in Coaldale. Opening in February 2019, Chrysalis Cafe is an independent coffee shop located in the Business Centre Building in downtown Coaldale that offers specialty drinks, tea, smoothies, sandwiches and sweet treats. Owner Krisna Schoen’s mom owns the building and neighbouring business Chickenfeed Quilts, and Schoen said one day they were talking and thought the building would accommodate a coffee shop perfectly. “We were talking about it with the family one night and decided that Coaldale needed a coffee shop,”said Schoen.“There is no good coffee shop in Coaldale where I can get a coffee or a cappucci- no, and I just like coffee,so we thought there was a good need for one in Coaldale.” The name of the cafe was inspired by Schoen’s first name and the name of her sister-in-law, Crystal,who opened the cafe with her. Schoen said they wanted something that “reflected our names.” Although Coaldale is also home to Tim Horton’s
and McDonald’s,both of which are chain-resturants who offer coffee and are located on the edge of town, Schoen noted The Chrysalis Cafe spe- cializes in specialty coffee drinks. “It’s freshly roasted, freshly ground, made like a good quality cup of coffee, instead of just a cup of coffee,”said Schoen.“The flavour is better, and there’s so many options that you can do. It’s just such a science and an art, it’s just kind of interest- ing.”
In addition to coffee, the cafe also offers an array of sandwiches, salads, smoothies and
tea.They offer baked goods from Koster’s Bakery in Picture Butte, and their coffee is from Mad Hatters, a Medicine Hat coffee roastery. “We did want to keep it a kind of local, southern
Alberta product.” Schoen says she enjoys meeting all the new peo- ple who come into the cafe,and making all the drinks. However, while Schoen enjoys drinking speciality

drinks. “There is a big science to it, like the flow rate.
Everything has to be very specific in order for it to taste really good,”said Schoen, who advised that people make sure they are using good coffee when making drinks like lattes themselves.“The better the coffee, the better the drink.” At the time of the interview, the cafe was expanding into an adjacent room to offer more seating in a more relaxed setting. Schoen said they also plan on doing a patio for the summer. “Just some little bistro tables out there. It’s a nice
spot, there’s not like a ton of wind out there, it’s pretty protected little areas, so it will just help it look more cosy and welcoming,”said Schoen.“It’s always nice to sit outside. So, in the summer in the mornings, it’s always nice to sit outside in the morning.” Her advice for aspiring cafe owners is to talk to other owners of coffee shops, noting that they offer great advice and have been “super helpful.”
