Even though this area is land locked, you can buy plenty of good quality seafood at both venues and other locations in town.
Burk loves to skewer their peeled and de-veined shrimp and grill the kebabs for about 4 minutes per side. Brush them with garlic butter as they cook or sprinkle on some dry seasoning like Cavender’s Greek Seasoning, an Arkansas product and popular pick.
Both venues sell scallops and Burk says those are great wrapped in bacon. Slice the bacon thin and precook it either in a pan or in the microwave for a few minutes so it’s still pliable and you can wrap it around the scallop. This method also works well with shrimp but the bacon needs to be precooked because if you don’t do that the seafood will be done before the bacon and the seafood will become tough.
Pre-cooking the bacon also reduces the flare-ups on the grill because it
eliminates some of the fat.
A variety of seafood is great on the grill.
“My mother loves lobster tails and dad puts them on the grill. He splits the shell, pulls the meat out and places it on top of the tail and brushes it with butter,” said Burk.
It’s not typical, but you can even cook crab legs on the grill, said Burk. Sprinkle Old Bay seasoning on them, close the top and let the heat steam them.
Of course, there’s plenty of places to find amazing trout in this region —fresh out of the river or lake. The best way to grill trout is whole with the skin on. Simply season it with salt and pepper and stuff the cavity with sliced lemon, onions and dill, rub the outside with olive oil and cook 10-15 minutes (depending on how lucky you were with your catch).
