Digital focus for MIWE T

A range of innovative new baking equipment and technology has been showcased by MIWE at European trade shows in Rimini, Berne and Lyon

he company has focused on developing from being a component supplier to an engineering and system partner for baking companies.

Its key areas of development have centred on energy performance, service, connectivity and smart engineering within the industry.

Among its main releases is the MIWE roll-in e+, with atmospheric baking technology. According to the company, the oven is believed to be among the first that can bake with a defined, standard atmospheric pressure in the baking chamber. This is said to deliver consistent baking that is unaffected by external factors such as air pressure, air speed and humidity, which enhances baking results.

Another benefit is said to be an improvement in process

reliability, oven operation and, in many cases, shorter baking times, plus offering an 8 % increased in energy efficiency. It also has a wireless core temperature sensor, which is also believed to be a first.

The firm has also released an Internet of Things/ Industry 4.0 system. This is said to offer customers more transparent procedures to optimise their baking procedures, including achieving consistent baking, and helping increase reliability of processes and avoiding production downtime.

The company’s connectivity brings together different solutions such as apps and a new user interface designed to make operation simpler and more transparent. All of its baking

stations, large ovens and bakery refrigeration units come with internet capability as standard, allowing users to connect to them without any additional investment via mobile apps.

In response to a growth in demand for warm snacks on the go, the company has released several oven systems that are perfect for the snack business: MIWE aero e+, MIWE gusto snack, MIWE cube, MIWE condo.

In addition to its baking functions, the new convection oven MIWE gusto snack offers steaming, gratinating, as well as regeneration.

The gusto snack’s easy-to-use steamer and combined functions (steam and hot air) allow almost completely odour-free preparation and regeneration of meat, fish and vegetables. The intelligent control system combines with the wireless, multi-point core temperature sensor to cook products on the spot.
