Vegetarian RecipesHerb the 0at Key Lime Mousse

• Servings: 4 • Prep Time: 20 Minutes • Cook Time: 40 Minutes • Chill Time: 20 Minutes • Total Time: 1 Hour, 20 Min Ingredients • • • • • • • • • • •

3 Hass avocados* (2 cups mashed) ½ teaspoon lime zest**

3 ounces fresh-squeezed lime juice ¼ cup powdered xylitol, or to taste ½ teaspoon stevia crystals

2 teaspoons pure vanilla extract 1 pinch sea salt

1 pinch ground cinnamon

1 pinch ground cardamom or nutmeg 2 tablespoon almond butter, optional ¼ cup sliced fresh strawberries, optional

Directions 1.

2. 3. Place the avocados, lime zest, lime juice, xyli-

tol, stevia, vanilla, salt, cinnamon, cardamom, almond butter (if using) and other flavored extract (if using) in a food processor. Process until smooth and creamy.

The flavor of this dish improves with time. For

best results, let sit 20 minutes in the refrigerator, or even overnight, before serving.

Garnish with strawberries, if desired.

*There are avocados and there are avocados. You want just ripe ones with a somewhat neutral flavor. If the avocados are over-ripe with a strong avocado flavor, you’ll need to add more cocoa powder and xylitol to let the lime flavor dominate.

** When zesting, be sure to grate only the green part of the lime, not the white portion, which is too bitter.

Who?s In 0 ontrol

Who’s in control in your life? Are you? Is everything in control and everything just as you want it to be? If not, why not and what are you doing about it? Some cats say we create our own reality, so just create it differently!

You say you have tried and it’s not working? Maybe you’re trying the wrong thing. Have you written down what you choose in your life? You need to see it in writ- ing, sound it out and think about it so that you know it’s right for you. Otherwise, even though you think you know, if it isn’t firmly thought out and written down, it may change in your mind. If it’s written down, you can read it every day and tell the Universe that these things are your goals and those things are your intermediate goals and this is what you are doing to manifest them.

Are you in complete control of your self-talk? You know, the words that go through your head when you think to yourself? Like “I wish I was as smart as that person; I’m just not real smart” or “They have all the luck; if only I was as lucky as they are”.

To control your life, the first thing you do is not worry about what some other cat thinks or how smart they are or lucky or rich or how fill in the blank they are. Your only measure of success should be yourself. Is it right for you, is it good enough for you, is it equal to your standards? Taking control of your life doesn’t have to be difficult. First thing you need to do is to take con- trol of your self-talk by observing everything that goes through your mind. Make everything positive and any- time you slip up, don’t get upset at yourself, just kindly correct yourself and go forward.

Carry a list of affirmations with you so that when you are somewhere waiting, like the Vet’s office, you can read them. Soon you will have memorized them and as you do, they will become your new subconscious mind programming and your subconscious mind will go to work to make them your new reality. Perseverance and cat magic will come through for you every time. You, Mister Cat or Miss Cat can change your life in the twitch of a whisker! Let your motto be “Don’t worry, be happy” and if you’re not happy, “Fake it ‘til you make it”!
