FULL OF BEANS Tim Sturk, Head of Coffee Training and Development at BaxterStorey was


recently recognised as one of the world’s leading coffee experts. Here he shares news of their latest Barista competition winner, and how specialist training is increasing sales and giving them a competitive edge.


Our passion for training our teams brings out their best. We absolutely love what we do and our aim is to always surpass our high street competitors in both service and product delivery.


We have just held the fourth annual BaxterStorey Barista Championships final, following a series of hotly contested regional heats in London, Bristol, Manchester, Glasgow, Dublin and Brussels. Our competition is about many things. It showcases talent, improves quality, consistency and overall standards and increases sales; but most of all it celebrates passion and enthusiasm. We upskill our teams and do not allow ourselves to be pigeon-holed into the historical perceptions of the foodservice market. When baristas take pride in their products, the customer always wins because they get to experience that passion in every cup.


The BaxterStorey annual competition has created a fiercely competitive spirit among our

baristas, sharpening their coffee- making skills and preparing them for the industry-wide UK Barista Championships. This year’s championships saw BaxterStorey lead the way with three of the top twelve finalists coming from within our business – the only baristas from the foodservice industry to make it to that stage of the competition.


The top 16 baristas went head-to- head in the semi-finals, with Amanda Lo declared the 2016 BaxterStorey Barista Champion. Amanda, who completed Level 1 of the Barista Academy, impressed the judges with her passion, attention to detail, professionalism and especially her signature beverage, which saw her combine Asian red dates, cascara, brown sugar and double cream. This perfectly complimented her sweet complex espresso, which was a blend of beans from Brazil, Guatemala and Papua New Guinea.


The three highest scoring baristas from the competition will now go


forward to represent BaxterStorey at the UK Barista Championships 2017.


Last year it was predicted that the total UK coffee shop market will exceed a turnover of £8.7 billion by 2018. Within this growing market we continue to support our team at the highest level. Our unique Barista Academy provides our baristas with many qualities. These include; a thorough understanding of the history of coffee, the coffee bean journey, the importance of the quality of milk, machine maintenance, recipe management and customer service. Ultimately, it gives the barista the skills needed to create an outstanding cup of coffee and it is these expertise, along with their passion for coffee that differentiates us from the competition.


We are reaping the rewards - over a period of three months, our business has already seen evidence of increased like for like sales of 15% or more due to coffee-focused training.
