In 1989 Lesley Lewis bought The George’s Inn in Haverfordwest, Pembrokeshire, bringing her P.A. (Kay Fuller) and her canary (Chicken) with her. It was Chicken who confirmed that they were doing the right thing when, after a completely mute three years, he perched in his cage on the back seat of the car and sang all the way from Swindon to Pembrokeshire.

Most of The George’s was derelict. It was Lesley’s intention to restore the building and provide good quality, healthy food in a relaxed, informal restaurant, where women would be comfortable and happy to come on their own. And so The George’s began its evolution.
