1 pound green beans


1 tablespoon cold- pressed hemp or extra-virgin olive oil 11⁄2 tablespoons freshly squeezed lemon juice 1 packed tea- spoon grated lemon zest 1 tablespoon chopped fresh dill, or 1⁄4 tea- spoon dried, or to taste


1 large clove fresh garlic, pressed or minced


1⁄2 teaspoon salt, or to taste


aren’t growing them, you can find several delicious variet- ies at the farmer’s market. Tis simple recipe is my favorite way to prepare fresh green beans. Use fresh dill if you can—I


find that fresh dill has a delicate flavor in this recipe. If you use dried, use it sparingly. Using hemp oil, versus olive oil, gives the dish an extra boost of ome- ga-3 fatty acids.


Freshly ground black pepper, to taste


Directions:


Cut the ends off of the green beans. Either leave them whole or cut them into 2-inch pieces. Rinse. Steam the green beans until fork-tender, 5 to 10 minutes. In a small bowl, mix together the oil, lemon juice, lemon zest, dill, and garlic. Pour over the cooked green beans and toss gently until well coated. Sprinkle the salt and grind the pepper over the beans; toss again, and serve.


Six (2/3-Cup) Servings mg cholesterol, 3 g protein, 24 g carbohydrates, 3 g dietary fiber, and 242 mg sodium.
