1 lb sourdough round San Francis- co-style Sourdough Bread has be- come renowned the world over. With multiple uses, such as soup bowls, spinach dip bowls and thousands of other uses, today we make the Franco American tri-tip Panini sandwich. The tri-tip is soaked in (WCM)Wine Coun- try MarinadesTM

nade for a few hours, then BBQ’ed to perfection. We hope it become one of your favorites! Takes less than 15 min- utes to prepare( except for the BBQ. We use already BBQ’ed meat the day before and chilled overnight)!
Ingredients for the main Sandwich:
Franco American Round, sliced thinly 1/2 think(cut enough for 4 slices) Tri-tip BBQed & thinly sliced Leaves of Arugula 2-4 Thin slices of Havarti
Cheese (or Jack)
The Wine Country Marinade Horseradish Sauce: (sauce spread for two sand- wiches)
1 tblsp. horseradish(hot or Mild)
2 tblsp mayonnaise
1/4 tsp. ground Black Pepper 1 tsp. stone ground mustard 1/8 tsp. salt
Equipment:
Pinini maker electric. or pan 9-10 inch. Enough for two sandwiches Spatula Patience
Directions: Take four slices of the 1/2 inch sour- dough bread and spread Horseradish sauce thinly over slices of bread(inside only.) Lay thinly sliced BBQ’ed tri-trip
on one side of each sandwich (you are making two of them). Take havarti slices and put on top of Tri-tip. Take other half of bread and put on top of havarti. That sim- ple. Now place in Panini maker on medium to me- dium high heat. If you are using a pan and don’t have a panini maker, you can push down top of sandwiches with spatula af- ter turning it over for the fi rst time at medium high heat. Watch as the cheese slowly melts. Slightly turn after 1-1/2 minutes(you do this for crosshatching toasting of bread with Panini maker only)When the sandwich is a little less than half it’s size and cheese starts to ooze
out....it’s ready(usually 3-4 minutes
total)! Place on plate and open up briefl y to put arugula lettuce(how ever much you want) and close up sand- wich, cut in half and serve with favor-
