~HEALTH BEGINS IN THE KITCHEN~ Dairy-Free Caprese Salad with Heirloom Tomatoes

SONOMA COUNTY, CA. ~ A simple cashew “cheese” re- places mozzarella in this clas- sic Italian salad. This raw veg- an and gluten-free version has zero cholesterol and one-third the saturated fat. For the best flavor, use ripe heirloom toma- toes and garden-fresh basil. Plan at least seven hours ahead to allow time to soak the cashews and refrigerate the cashew “cheese.” This recipe requires a high-speed blender


(such as a Vitamix or Blendtec.)


Ingredients For the cashew cheese 1 cup raw cashews, soaked 6 hours 3 tablespoons freshly squeezed lemon juice 1 teaspoon salt


2 to 4 tablespoons water For the salad:


4 medium, vine-ripened heirloom tomatoes ¼ cup chopped fresh basil, plus 4 sprigs for garnish


Salt and freshly ground pepper, to taste


4 teaspoons extra-virgin olive oil


Directions: Make the “cheese”. Rinse and drain the cashews and place them in a high- speed blender with the lemon juice, salt, and 2 tablespoons water. Blend until the mixture is ab- solutely
