… wines of great intensity achieving a fine balance of power with elegance Illasi Valleys is one of Italy’s most prestigious wine-making areas. The area includes many wineries and thirty of these have signed up to the Illasi Valleys network; each one offers wine tastings with the possibility to buy their on production. Picturesque vineyards planted on marl soils give some of the best quality wines in the Valpolicella appellation including Superiore, Ripasso, Amarone and Recioto, is part of both Amarone, Soave and Valpolicella appellations. Garganega is used in the production of Soave whilst Corvina, Corvinone and Rondinella are used to produce Valpolicella. The more southerly areas of the valleys and the lower hills are the location off the Garganega vineyards used to make the prestigious wines of Soave.. Illasi Valleys is the birthplace of Romano dal Forno and many other great wine-producers, many of who are young and have a great passion and unbridled love for the land they live in.
… and rich and vibrant olive oil Some of these wineries also produce rich and vibrant extra-virgin olive oil which adds a delicious taste to local dishes. In the most northerly parts of the hills, on the most impervious and often terraced soils, many of the local variety of olive trees such as Grignano and Favarol have been planted alongside the more common national varieties of Frantoio, Leccino and Mariolo. The Museum of Olive oil in Illasi, part of the Bonamini olive mill, gives visitors a great insight into the olive oil industry. About twenty of the local restaurants and country houses have also signed up to the project bringing with them the prestige of the highest quality of Veronese cuisine with dishes that showcase the local produce.
